I've seen that bagel-cut trick before. It seems to unappetizing to me---you end up with that lumpy bit in the middle. However, it would be nifty to do that with cinnamon roll dough, because (a) tasty in all parts and (b) naturally a pull-apart food; however, I don't think it's possible to slice dough so precisely (especially if it were rolled with cinnamon-sugar layering).

Maybe a really big coffee-cake sized thing would work.
